La evaluaci\u00f3n del color es una parte esencial en la investigaci\u00f3n y desarrollo de productos y la soluci\u00f3n a problemas de procesamiento de carne. Cuando se realizan correctamente, las evaluaciones de color visual como instrumental son herramientas potentes y \u00fatiles de investigaci\u00f3n.<\/p>\n<p>Percibir un objeto e identificar su color implica un conjunto complejo de circunstancias que comprende el objeto, su entorno y c\u00f3mo el espectador percibe los est\u00edmulos y los traduce en una percepci\u00f3n de color. Para percibir el color es necesario un observador capaz de tal percepci\u00f3n. Tal observador puede ser el ojo humano o los instrumentos de medici\u00f3n del color-como color\u00edmetros o espectrofot\u00f3metros.<\/p>\n<p>El color de la carne y de otros productos tambi\u00e9n se produce a trav\u00e9s de la interacci\u00f3n entre la luz, el instrumento de medici\u00f3n y el objeto a ser evaluado. La luz es de gran importancia para la percepci\u00f3n del color. Sin luz no hay color. Para que el color sea detectado, la luz debe reflejar el objeto a ser visualizado y retornar al ojo. Para lograr el desarrollo del color, la luz que ilumina el objeto debe tener un rango espectral que permita la reflectancia de las longitudes de onda que el ojo pueda detectar y el cerebro interpretar como un color correspondiente. La fuente de luz debe contener las longitudes de onda capaces de reflejarse en la superficie de la carne, o el color no ser\u00e1 notable. Para la evaluaci\u00f3n sensorial e instrumental de la carne, la fuente de luz debe ser estandarizada.<\/p>\n<p>Existen algunas condiciones que pueden alterar el color de algunas carnes.
